Yes C-41 film can be developed in b&w chemistry, but as you
discovered the colour mask remains. I think someone explained this
regarding the differences in the two processes in the forum not that
long ago. I did one roll just to see - I don't believe EVERYTHING I
read on the Internet :) I've never made any prints from them, just a
few scans to show people.
