Most "traditional" B&W films (e.g. Tri-x) are developed by custom labs or individuals at home these days. The alternative is to use one of the B&W films that can be processed at the places that do color. Ilford XP2 Super or Kodak T400CN are examples of these. They are processed by the same machines that do color negative film. When it comes to the prints, some places will do better than others at getting a really traditional looking print. Most of the minilabs print everything on color paper, so the prints can come out with a somewhat unpredictable amount of brownish tinge. At some places you can request that they use black and white paper.
