New to Proccessing

As per my prior inquiry most of you will know I am new to the proccessing game....I know that there are a million and one ways to print a negative, but are there techniques to proccess films in certain ways for getting different contrasts...Also I am noticing no matter how hard I try that I am getting scratches on my negs. which in turn show up on my prints....HELP!!!!!
