fat free applesauce cheesecake

Crust:

1 1/4 cups graham cracker crumbs (about 20 squares) 1/2 cup chopped pecans, toasted (optional)* 1/4 cup firmly packed brown sugar 1/4 cup margarine or butter, melted (or you can use a reduced calorie shell from the supermarket or your favorite low cal crust recipe) *Spread nuts in single layer on cookie sheet. Bake 5 to 10 minutes at 350, until light golden brown. Stir occasionally. Do not overbake.

Filling:

3 (8-oz.) pkg. lowfat cream cheese, softened 1 cup sugar 2 tablespoons all purpose flour egg substitute equivalent to 3 whole eggs 1 cup applesauce 1/2 teaspoon cinnamon 1/8 teaspoon nutmeg

Heat oven to 350. In medium bowl, combine all crust ingredients; mix well. Press in bottom of ungreased 10-inch springform pan.

In large bowl, beat cream cheese and sugar at medium speed until smooth and creamy. Add flour; blend well. At low speed, add eggs 1 at a time, beating just until blended. Add remaining ingredients; beat until well blended. Pour into crust-lined pan.

Bake at 350 for 50 to 60 minutes or until center is set. Cool. Refrigerate several hours or overnight. Just before serving, carefully remove sides of pan. Store in refrigerator.

Yield: 16 servings
