I have heard of poi(not sure of spelling) Exactly what is it and how is it made and served.

Poi comes from the root of taro. The taro root is pounded until it becomes a purplish paste. It is then mixed with water to a "one-, two- , or three-finger" consistency. The poi being thicker the less fingers you need to eat it with. From there it is poured into a bowl and used as the main source of carbohydrates.
