Don't stock up on Bean-o, here's a fool-proof method to cook beans with no gas after affect. (1) Wash and rinse beans in cold water and discard rocks and discolored beans. (2) With just enough cold water to cover beans boil over high heat for 5 minutes. Put lid ajar and turn heat off (leave beans on burner). Let sit for at least 6 hours. Do not drain water. Bring beans to a boil and simmer over low heat (covered) for 1 hour or until tender. You can add hamhocks, SPAM, onions, (whatever), 30 minutes before cooking time is done.

Two tips from a vegetarian who eats a lot of bean products. First, emulate Mexicans--add epazote to the beans to ameliorate their anti-social effects. (Try saying that after sampling the product of your new solar distillery.) Easily-grown herb seed can be obtained from Richter's (superb culinary and medicinal herb source, educational catalogue -, Canadian, very friendly, no problems ordering from US). Second, and very important: don't add salt until the beans have softened, otherwise cooking time is lengthened and the beans will not be as tender. TVP bacon bits can add flavor.
