storage of wheat/other grains

I recently sent off for a vacuum system that will vacuum jars, buckets,etc. If I store wheat and other grains in jars, vacuum out some air and also use oxygen absorbers, would I really need to do the twice freezing method to kill insects and later the eggs that hatch? I'm trying to simplify, but I sure don't want to end up with bugs. The organic farmer that I am buying wheat from says he tried the diamatious(sp?) earth and it didn't work for him. Any advice would be appreciated.
