Recipe: y2k corn pone

use up that pot of beans that you are getting tired of eating. 4 cps of very juicy and spiced up cooked beans 2cps cornmeal 2 tsps baking soda 1 tsp salt 1 qt buttermilk 2 eggs slightly beaten 1/4 cp of margarine Heat beans until real hot and pour into a lightly greased 9X13 pan Preheat oven to 450 Mix the cornmeal, baking soda , and salt in a large bowl. Melt the margarine and combine with buttermilk and eggs. Stir the wet and dry ingredients together until smooth and pour them over the hot beans. Bake on the top rack of your oven until bread is a rich golden color and the sides of the corn bread pull away from the sides of the pan. About 30 minutes. Serve with salad or cooked greens. Yummmmmmm!

PS: a rule of thumb in baking. If you use sour or buttermilk.... then use baking soda. If you use sweet or regular milk... then use baking powder.

My 9 year old son HATES beans (I think it's on principle, not just taste/texture). If there's any way that I can sneak 'em in, I'll try. That way, I can say, "Whadaya mean, you don't like beans? I ate some fudge made with beans last week at a small Y2K get together . Will get the recipe and post it. Yes! I said fudge made with beans! It was great! Good texture. If I hadn't been told beans were in it I would never have known.
