Help on storing cheese : LUSENET : TimeBomb 2000 (Y2000) : One Thread

I have read about storing cheese for long term by coating the block with wax, 4 - 5 layers. When I experimented with a small block of mild chedder, it would heat the cheese slightly and make some oild. Oil and wax dont work well together. Can you freeze cheese? Can you chill the cheese to near freezing to help the wax harden faster and stop the oil production and make it seal better. Thanks for the help and suggestions in advance. smfdoc

I would store the cheese in one of those red wax things the Europeans use - it works for them! You can then put the cheeses in a string bag for safe keeping!

Could it be wrapped in gauze, then "waxed"?
