Recipes using wheat from "Cooking with Stored Foods"

"Cooking with Stored Foods" by Carlene Tejada and Carroll Latham-a great how-to book has a number of recipes using wheat. Thought I would post a few for your culinary pleasure.

Hamburger and Wheat Casserole

1 lb lean ground beef

1/2 cup hot water

2 T dried chopped onion

1 T dried chopped green peppers

2 T dried chopped mixed vegetables

1 tsp salt

1/2 tsp ground cumin

1/2 tsp ground marjoram

1/4 tsp black pepper

1/2 to 1 tsp poultry seasoning

3/4 cup uncooked cracked wheat or 3/4 cup bulghur

2 cups boiling water

1 cup tomato juice

1 (8-oz) can tomato sauce

In a large skillet, lightly brown ground beef. Add 1/2 cup hot water, onion, peppers, vegetable flakes, salt, cumin, marjoram, black pepper and poultry seasoning. Simmer over medium heat 5 minutes. Preheat oven to 325F. In a 3 quart casserole, combine meat mixture, cracked wheat, 2 cups boiling water, tomato juice and tomato sauce. Bake uncovered about 1 1/2 hours until wheat or bulghur is tender. If casserole has absorbed most of liquids after 1 hour, cover for final 30 minutes. Makes about 6 servings.

Peruvian Whole-Wheat Soup

3/4 cup whole wheat flour

4 1/2 cups canned or homemade beef broth

1 1/4 tsp salt

2 T dried chopped onion

1/2 tsp dried minced garlic

1/4 tsp dried leaf oregano, crushed

In a 2-quart saucepan, brown flour about 10 minutes over medium heat, stirring constantly with a wooden spoon. Set aside to cool about 5 minutes. Gradually stir broth into browned flour. Sitr in salt, onion and garlic. Cook and stir over low heat about 15 minutes until mixture thickens slightly. Stir in oregano. Serve hot. Makes about 4 servings.

Whole Grain Patties

2 to 3 cups Thermos Wheat (recipe to follow)

1 medium potato, unpeeled, quartered

2 medium carrots, unpeeled, cut in pieces

1 onion, quartered

1/2 cup canned whole kernel corn, drained

4 radishes

2 T canned chopped green chilies, if desired

1 tsp salt

1/4 tsp seasoned salt

pinch of garlic powder

1 tsp Worcestershire sauce

about 1/3 cup oil or bacon drippings

1 cup shredded cheese (4-oz), optional

salsa

Prepare cooked wheat. Place a baking dish under food grinder. Grind together cooked wheat, potato, carrots, onion, corn, and radishes. Grind chilies, if desired. Spoon ground mixture into a large bowl. Stir in salt, seasoned salt, garlic powder, Worcestershire sauce and 2 T oil. Lightly grease a griddle or skillet with oil and place over medium heat. When hot, spoon 1/4 c wheat mixture onto griddle. Flatten with a spatula to make patties. If patties stick, add 1 to 2 T oil. Cook until lightly browned, then turn and brown other side. Place a little shredded cheese on each patty, if desired. Cook until cheese is melted. Repeat with remaining wheat mixture. Serve with salsa. Makes 12 to 15 patties or 6 to 8 servings.

Thermos Wheat

2 cups water

1 cup whole wheat kernels

1/2 tsp salt

In a small saucepan, bring water to a boil. Pour about 1/2 cup boiling water into a 2-cup thermos. Cover and set aside. In a sieve, wash wheat under running water. Pour hot water from thermos. Spoon washed wheat into hot thermos. Add salt and remaining boiling water to about 1 inch from top of thermos. Attach lid. Let stand 6 hours or overnight. Makes about 2 cups.
