Is there a way to make mayonaise with oil and dry ingredients?

I know the jars on mayonaise say to 'refrigerate after opening', is there a way to make it with dry ingredients (ie; powdered egg, etc.) and oil, so you could only make what you needed at the time?

Sammie...I have never used dry eggs. But have made mayonaise for years. Beats the store stuff for flavor, but I usually make it for something specific, like a large macaroni salad. It does still need refrigeration, so you need to make fresh and eat fresh. I have 7 hens that give us 4 to 6 eggs a day and so we have all the eggs we need. I have also stored up a good number of gallons of olive oil. So will be making my own mayonaise.

Sammie, I don't have the answer to your question. Keep in mind though that if all you're looking for out of the mayo is the "go away" (which is a term used to describe the eatability of a food, for example, a buttered bisquit provides better go-away than a dry bisquit) quality provided by the oil, then you might just be able to substitute an olive oil viniagrette, maybe thickened by something like mustard.

Here's a recipe for mayonnaise, on another thread. It looks like there's no reason why powdered egg yokes shouldn't work. I'm going to try it and I'll post here the results.

I have a convertible refrigerator but I hate to waste speace in it on something I can make from storage ingredients.

I'm trying to figure out how I might make this better for my husband, who is diabetic and has to have less sugar (especially if he can't get his medicine). Maybe I can make it with Equal sweetener. This is something that will be of use to us in any case. (Which is true of a lit of the preparations I am making.)
