2 questions about canning

greenspun.com : LUSENET : TimeBomb 2000 (Y2000) Preparation Forum : One Thread

One is, what is Clear Gel as used in canning? Is it the same thing as Sure-Jel?

Two is, can sour cream be canned?

Thanks!

a woman who is a long time dairy goat person, owns one of the top 10 milkers in the USA, told me she has been canning milk for years. She uses the boiling water method - a complete full hour (she stressed this). She told me hers keeps for months using this method.

Clear Jel is for canning pie filling, I believe. I read it is chemically altered corn starch. I just use corn starch in canning the pie filling. It separates, but I like it better.
