Timing is right for this recipe

Pumpkin bread

1 1/2 cups all purpose flour

1 cup whole wheat flour

1/2 teaspoon salt

1 teaspoon baking powder

3/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp fresh nutmeg - grated

1/8 tsp ground cloves

1/2 cup rasins - plumped

1/2 cup chopped walnuts

1 cup pureed cooked pumpkin

3/4 cup granulated sugar

2 eggs

1/2 cup veg oil

Preheat oven to 375`, Grease flour two 8 1/2" x 4" loaf pans

mix dry ingredients, add plumped rasins, walnuts, pumpkin, eggs, and oil into bowl, mix well.

Bake 55 minutes, let cool for 15 mins, remove from pans.

Note; to plump rasins, cover with boiling water, and let rest for 15 mins, then drain

I'm thinkin' Monday should be a great bargain day for pumpkins, maybe.

You know - I think maybe this would be a good dry mix to keep on hand. Leave out the pumpkin, nuts, eggs and oil, but mix the other stuff together and measure it out in jars or baggies. Then you could add whatever veggie/fruit you have on hand - like grated carrots, or mashed bananas, minced apples or pears, chopped strawberries etc. You might have to add some extra moisture with some of the veggies or fruits. Would make a nice treat and change from the run-of-the-mill preps.
