help with the malting process

Hi, Does anyone know what the key ingredients for the malting process are when making assine breads?

The wheat or barley is sprouted...soak it a day, then do rinse and drain until the root sprouts are just a bit longer than the seed. (If you sprout in a mason jar you'll want to avoid having too many seeds in the jar or the germination % will go down and lower the malt quality. When the sprouts are ready toast them in a slow oven (or put them in a solar dryer) Once dry they can be ground and included in your bread.

Please tell me what assine bread is and why do you put sprouts in it? I have never heard of this.Thankyou.
