what are pork skins and how to cook

My family loves PORK SKINS, like you buy at fairs and craft shows, not the store packaged kind. Do you know where to get the "raw material" and how they are cooked? I have asked at super markets and specialty meat markets and what I get home with needs a shave and a hair cut or there is such a layer of FAT they are useless. Is this a true pork product or some batter type item? Thank you for any answers you might come up with. The Internet has not been any help either.

From what I saw on tv once where a commercial maker gave a demo, you have to get some fresh skin from a slaughter house, clean and defat it, boil it, cut it into small pieces, dry it hard, then dump the loose pieces into boiling oil and they are done in a few seconds. Then scoop them out with a sieve and dry and cool them. I like them but I hardly ever have them.

Coincidentally, I just tasted home made pig skins yesterday. One of the ladies I work with has a cousin in South Carolina that makes them. He puts vinegar as well as salt on them and they were absolutely delicious. We are in Virginia and I am actually from New Hampshire so I had never tried homemade ones. All of us in the office were asking for his price list so we can order some. He does make them to sell and from the taste of that handful, he will soon be a rich man. He also has other flavors such as BBQ and just salted. I'm not sure what else. Sorry I couldn't answer your question, at least someone already has, but I just had to comment on how good they can taste and to my way of thinking if you are interested in making some you could probably make a good income selling them on the internet even if you had to get a license from your state. Sounds like a good home business in the making to me.

you can buy the pellets from two sourcees i know of check under yahoo "pork skins" www. carloniasnacks.com and wallacesporkskins.com you put in hot oil about 375 degrees for about two minutes. a little goes a long way. in south ga. we cook them sometimes when we are cooking fish.some folks put them in a microwave in a brown bag not quite as good i may have missed the e mail adress but you can find them under yahoo. a lot of folks sell them already cooked but they are not near is good. the pellets will last for months without refrigeration hope this helps
