Shaun,

Here's a great site for all kinds of mixes. The only problem is - after you show this site to your wife you might never get the computer back!! I'm going to copy & paste their address -I've not tried it on this board before so I'm not sure if it will come out. If not just try http://busycooks.About.com .

If dairy is okay, this is a very good one:

1 can (14 oz.) sweetened condensed milk Eagle Brand or store brand 1 1/2 cups skim milk Mix well. Flavorings: 1T cocoa powder, 1t almond extract for Chocolate Almond Eagle Brand now makes a chocolate condensed milk, I think, but I haven't tried it yet. If you use it, you may not want to add the cocoa powder. 2t vanilla extract for Vanilla 1t orange extract, 1t almond extract for Orange Cappuchino 1t almond extract, 1t vanilla extract for French Vanilla Makes about 3 cups--store in refrigerator. I like it--a little too much, lol.

If you want to use the non-dairy stuff, I suppose you could try mixing the plain dry stuff with water (hot water? and maybe use a blender or immersion blender) to desired thickness, then adding the flavorings. I think the dry stuff already has some sweeteners (corn syrup or similar ingredient) in it. I have not tried this, and don't know if you would need to refrigerate it if made in this manner.

Here is a recipe for sweetened condensed milk using nonfat dry milk (1 cup), sugar (2/3 cup), water (boiling, 1/3 cup),and butter or margarine (3T, melted), makes the same amount as a can, but I have only made the creamer using the canned stuff (stock up when on sale).
