Did the stranger know that Sylvia knew where the white heron was? He seemed as though he knew that if he offered enough in reward he would get it out of her.

I agree with you. I think that the stanger had an idea that Sylvia knew where the white heron was, but he respected the fact that she wasn't willing to give in to his bribe. It also gave him an idea to keep looking if she was willing to give him some hints, but she was not going to lead him directly to the nest.
