Delicious Mexican Cornbread

One of the best in my collection. I made this by mistake (confusing two recipes) and am frequently asked for the recipe:

Mexican Spoonbread

Mix together:

1 cup all purpose white flour 1 cup yellow cornmeal 3 TB baking powder 3 TB sugar 1 TB salt

Mix separately:

1 cup cottage cheese or sour cream or a mixture of both 1 cup milk 1 16 oz can creamed corn 1 egg

Beat wet and dry mixtures together in electric mixer at high speed for 3 minutes.

Beat in:

1/2 cup melted butter/margarine (1 cube)

Pour a little less than half of the batter into a buttered/greased glass pan. Sprinkle evenly over batter:

1 4 oz can diced green chilies 1 4 oz can diced jalapenos (Ortega preferred for both)

Then sprinkle over chilies: 4-8 oz longhorn, colby or cojack cheese.

Top with remaining batter and sprinkle on top layer:

4-6 oz any of the above cheese.

Bake @ 400 degrees for 35 minutes or @ 375 degrees for 45 minutes depending on how much time you have.

Also you can add diced tomatoes or green onions in between the layers. Fresh chilis can also be used in place of canned, but the results are much hotter. Enjoy!
