Skinning chickens

It sounds much harder than it really is. When I slaughter my chickens I use a killing cone and slit the chickens neck and let tem bleed good. Once bled I remove them from the cone and remove the head from the neck and the neck from the body. At the spot were the neck has been seperated from the body I take my poultry shears and make a cut in the skin (not into the meat) so I can get a good grip and start pulling the skin down when I get to the wings I use my poultry shears again and cut the skin around the base of the wing and go back and skin the wings seperatly after I have removed the skin from the main body. Sometimes the skin will come off the legs with the main body and sometimes I have to do them seperatly also. Think of it as undressing the chicken, sort of removing its feather jacket. I use my poultry shears for many parts of meat prossesing I love them for cleaning fish, they are easier to handle than a knife it least for me they are. When buying poultry shears spend the money and buy qulity ones. I have one small pair for close work and one large pair with long handles for leverage when cutting thru bones. I bought my best ones at a yard sale.

When we do a quanity of chickens, Hubby skins them; it is easier than plucking them and I like to skin them before we cook them, anyway. And I second the motion about the poultry shears!

Do you gut them out before, or after skinning?

Gut them after skinning them. At least that is how I have done them maybe someone may do it differently.
