freezing bread dough

I want to make 5 loaves of bread for a party, but I won't have time on the day of the party. I need to make the dough ahead and bake the loaves the day of the party. When in the process of making the bread dough would it be best to freeze(how long is okay)? Before first rising? After? After forming into loaf?

I made 12 loaves of french bread. I baked 2 the day I made the bread, the rest I shaped into loaves and froze. I froze the dough after all the risings and they were shaped. I froze them first, then wrapped each loaf in saran wrap and then aluminum foil. The bread has been in the freezer now for 1 1/2 weeks and I just baked one. It was as delicious as the others the day I made the dough. I just let it sit in room temperature for about 20 to 30 minutes and baked according to the directions.
