Rennet-dry and liquid

Hi Countrysiders,

Some cheese making recipies call for liquid rennet and some call for tablet rennet. What is the conversion between liquid and tablet??

Also, goat cheese recipies welcome!

Hi Jaye, In her great book "Goats Produce Too", Mary Jane Toth has this conversion for rennet: 1/2 tsp liquid rennet = 1/4 tablet rennet. Both will set 2 gallons of milk.

I have found this to be accurate, but make sure your rennet isn't too old. I had some problems making cheese that turned out to be rennet tablet over 3 years old or more.
