freezing dough

greenspun.com : LUSENET : Bread.com FAQ : One Thread

Can bread dough be frozen? If so, what is the best process to use? Once frozen, what's the best way to defrost and bake it? Would these answers apply to pizza dough also?

Bread dough can be frozen. When I am making dinner roll dough ahead of time, I will make the individual rolls, put them close together on a cookie sheet and freeze them quickly. Then they can be put into plastic bags and kept until I need them in the freezer. When you're ready to have warm rolls, simply take them out, place spaced out on baking sheet, let rise, and bake! This would apply to pizza dough, as well.
