Good salsa recipes anyone?

Hello, I've just been thru the old threads looking for salsa recipes,and I couldn't seem to find any.Does anyone have a good salsa recipe they are willing to share? I've only made salsa one other time,and it was very "vinagery". We all like the traditional sort of salsa here,but it would be neat to get all kinds of recipes!Thanks! Blessings, ~~~Tracy~~~

I just got the WI extention bulletin about canning salsa safely B3570. The author told me that this was her favorite:

Tomato/tomato paste salsa 3qt tomatoes, peeled and chopped 4 c green peppers, chopped-about 2 lg peppers 12oz jar jalapeno peppers-in vinegar drained 1c long green chilies, seeded and chopped-about 3 med 3c onions, choppped-about 3 med 3c celery, chopped 4 cloves garlic,minced 2 12oz cans tomato paste 2c bottled lemon juice 1tbsp salt 1c sugar 1tbsp ground cumin yield 16pints combine all ing. in large saucepan. Bring to boil. Reduce heat and boil for 30 minutes, stirring occasionally. Ladle hot salsa into hot pint jars, leave 1/2 inch headspace. Wipe jar rims and cap. Process in boiling water canner for 20 min-that is for our area, change of altitude may change process time. Do not change the measure of ingrediants or you may change ph and may become unsafe to boil water can.

This sounds like a good recipe. You may want to char the skins on the peppers (get all the skin good and black, i do mine on the gas stove burner!) Then put in a bowl with a lid for 10 minutes to steam then rub off all the blacken skins. It's an extra step but it's well worth it, it adds a slight smoky flavor to the salsa. Enjoy!!!

Heres the best salsa recipe i've found. You can cut this down and not make so much but it goes fast. Start with 1 bushel of tomatoes, peeled, cored and quartered. Add 15 bell peppers, 20 large onions,3 stalks celery, 1 to 1-1/2 gal. jalapenos, stemmed (remove seeds for milder salsa). Run all above through food processor til desired thickness.(don't overprocess as it will be too runny) Add the processed veggies to a large pan (we use a water bath canner pan). Add 3- 3.5oz. jars garlic powder, 1/2 pound brown sugar (more to taste), 1.5 quarts white vinegar, salt and pepper to taste. Cook til veggies are done. If too thin, adjust with corn starch in cold water. Start with a half box cornstarch if you like it thick. Put in jars, seal in water bath 15 minutes. Makes 20 or more quarts. This is by far the best i've ever tasted, home-made or purchased. Enjoy!

This is how they make it in the Mexican food restuarants in Texas. Chop 1 onion. Add 1 diced tomato, 1/2 jalapeno pepper finely chopped without the seeds, add about 15 leaves of cilantro, (this is the most important ingredient). Add the juice of 1 small lime. Lets flavors meld for at least one hour. Perfect !

I like mine mild so I'll try to remember {hubby normally does it} Fresh or canned diced tomatoes ,onions , cilanttro ,hot peppers .Thats all I remember .I do everything to taste and never measure .I will have to see if i forgot anything .
