I am looking for information on how best to preserve cumquats. I am searching for my father who is looking for anything on the topic. Any help would be greatly appreciated.

preserving cumquats

Pickled Cumquats.

1 teaspoon salt 600ml water 500g of cumquats, washed 150g castor sugar 1/2 stick of cinnamon 1 teaspoon of cloves 600ml of white wine vinegar.

Dissolve salt in water in a saucepan and bring to boil. Pour over cumquats in a bowl and let them stand overnight or for 12 hours. Drain. Simmer sugar and spices in vinegar until sugar has dissolved, then for a further 5 minutes. Pack the cumquats into a sterilised, HOT jar. Then pour in the HOT vinegar syrup, ensure all fruit is covered and seal. Store in a cool place for several weeks before using. Both the syrup and the cumquats can be used.

Use the fruit to flavour a roast...stuffing for a chicken...slice and put on lamb..Use the vinegar syrup as a glaze for a roast as well.
