we have way to many yellow wax beans, can they be left on the plant and left to dry?

Sure, I do it all the time. If possible, leave them until the pods are just leathery skins. Then pick and shell them. The seeds are probably still going to be a bit wet, so be prepared to let them continue to dry. If you aren't going to plant any of them next year, put them in a barely warm oven to help dry them. When they seem very dry when you try to push your finger nail into them, put them in jars. But keep an eye on them for a while, open the jar and check on them every now and then to make sure they were in fact as dry as you thought. Use as you would any dry bean. Gerbil

I don't see why not Renee. If you wanted to save seed for next year that is how you would do it. I'm sure you could throw the dried beans in a pot of ham bones & have a great meal also. I love beans & could eat them every day.....try it, what have you got to lose?
