Help. Need times for canning apples

greenspun.com : LUSENET : Countryside : One Thread

Just go for a few years without canning, and make a move in the same time frame, and you can't fine anything you need. I finally have everything: jars, equipment etc, only now I can't find my canning book. Would someone please take pity on me and look up how long I need to process apples, in quart jars, at 5500 - 6000 ft? Also apple juice. Thank you so much. I know that pesky book is here somewhere.

Hey Cheryl, you lucky duck! Our apple crop was a total flop down here in Hotter than H*#$& , Arkansas. According to my USDA canning book, apples go off at 26 minutes, including the extra minutes for the altitude, 11 minutes for the juice. That is for boiling water bath. Good luck, and enjoy.

Apple rings/slices/sauce -- 30 min (10 min extra for altitude) Apple juice -- 20 min (10 extra for altitude)
