Hi!A while back someone posted "Thanksgiving at Grampa Hoots" or something to that effect.I said on that post that I'd have brought pecan pie and Snowy Apple Squares and that I'd post the recipe later. Wouldn't you know,I totally misplaced that recipe! My husband found it in the old trailer. Here it is:

Snowy Apple Squares(aka Danish Pastry Apple Squares)

preheat oven:375 degrees

Ingredients:

2-3/4 C.flour ------1/2 t.salt ----1C.+2T butter(recipe calls for shortening-I cook with butter and oils only-no margarine,shortening,or lard)----2 eggs separated(recipe says one but 2 works better)---milk ---1 C.crushed cornflakes----8 C.sliced apples----1 t.ground cinnamon----1/4 t.ground nutmeg----2/3 C.sugar

Icing : 1 C. confectioners' sugar---1/2 t. vanilla---1 to 2 T.water

Sift flour with salt into med.bowl;cut in butter till particles are sz. of small peas.Slightly beat the egg yolk(s) in a measuring cup;add enough milk to yolk(s) to make 2/3 C. liquid. Add liquid to flour mixture;toss together to make a soft dough.

Divide dough into 2 portions.Roll one portion of dough to fit a 14x10x1 inch jelly-roll pan.Sprinkle dough with crushed cornflakes.

Combine apples, cin.,nutmeg, and sugar;place in a layer over the cornflakes.

Roll out remaining portion of dough;place on top and pinchedges together.Beat egg whites until just stiff;brush over crust(peak and valley merigue-style).

Bake in a preheated 375-degree oven for 50 to 60 minutes, or until apples are tender and crust is golden brown.

Enjoy!These are especially delicious warm.

Anyone have a good recipe they'd like to share?

God Bless,~~Tracy~~

Forgot to mention for the benefit of those with dough rolling problems (like myself) you can either roll it loosly around your rolling pin and transfer it to the pan that way(unrolling it right into the pan and over it) or you can cheat and roll your dough between waxed paper or plastic wrap.(I usually cheat.)
