Muffins for Dinner!

Okay, I've got the majority of the breads and muffins baked to send to my in-laws for Christmas. Naturally, I had to test them to be sure they were good, since I tried some new recipes. The new recipes were GREAT and now I'm thinking I should go out and buy them picture frames and keep the goodies here LOL! Seriously, I'm sure they'll think I'm insane, because I found some really good HEALTHY recipes, and they're big processed food people. If anybody wants good muffin recipes, let me know- I've got Sunshine Muffins (apricot and pineapple) Morning Delight (carrots, raisins, nuts and coconut- this combo sounds ODD, but they taste FANTASTIC)Oatmeal Cocoa Muffins, Honey Oat Cranberry bread,Double Banana Bread, Cappucino Cream with Fudge Ripple.... and the list goes on. I did make double batches, so Randy and the kids and I may just settle down in front of the fire with a basket of muffins, a butter dish and some hot tea here very soon. : ) I hope all is well with everyone.
