goat milk ice cream recipe needed

greenspun.com : LUSENET : Countryside : One Thread

Our 4-H club has been contacted by a woman needing a recipe for ice cream made w/ goat milk. Seems her son is allergic to cow milk. I'll forward any recipes we get to her. Thanks a bunch!

bob-tell her that any icecream recipe that is written for cows milk works with goats milk. Same proportions etc.

I have a recipie for "go-bert" which is amde from koolaide. I have to look it up in my recipie book and then type it, will do later tonight when I get home from work. You should also be able to fin it by going to msn communities, then to the goat shed, and then their files, would ahve been from last summer or spring. I hope this helps temporarily.

I've put this on here before, but it's worth repeating.: 4 eggs beaten...1 can eagle brand milk(cheaper brands are fine)...2 1/2c. sugar...2T vanilla...1/2t salt...2 qt goat's milk...mix...fill to bottom of last prong on paddle...process as usual...rock salt and 2 bags of ice...Enjoy!

There are lots of recipes specifically for goats milk out there but I use the ones I have always liked made of cows milk. You dont have to do anything different. I make all our ice cream and it turns out just fine. The more cream you put in with the milk the creamier and smoother the ice cream. I separate my own cream and add it to the whole milk when a recipe calls for cream, half and half or evaporated milk. If it calls for condensed milk I make my own but if you dont you do have to use that instead of cream as it has a substantial amount of sugar in it.

We make Cindy's recipe all the time, trick with adding fruit is to add it near the end of the processing. Vicki
