Hi all it's been some time hope you all are well. My five year plan to get beound the sidewalks is going well but have little time to get on the computer! To the question the local store is having a sale on cheese $1.50/lb. we use a lot of cheese how long dose cheese last and can i dip it in wax to help keep it longer thanks Shaun

I don't know about the wax, but you can freeze it. The texture will be more crumbly, but the flavor and melting quality will be fine.

If you freeze your cheese you want to make sure and shred whatever amount you want to use shredded. I doesn't shred well after it has been frozen. I agree that freezing it would be the best choice.

shaun, when I find those wonderful sales I buy it up as we really enjoy cheese as well, and I am not very good at making enough hard cheese for us. I freeze it how I intend to use it. Like shred some for cooking and slice some for cheese and crackers and sandwiches. I freeze it in sandwich baggies inside a more substantial freezer bag and it keeps for quite a long time, and I can take out of the big bag only what I want to use that day. I have also found that it will keep quite a while in the refrigerator if it is unopened from the original package. My hunch is that it is probably close to the outdate, or it would not be such a good buy, which would eliminate that option. Check the outdate. If it is going to outdate, best to freeze anything you won't use soon.

Shaun, You didn't say what kind of cheese, but if it is american processed cheese, there was a thread on this forum sometime ago for making a "cheese whiz/velvetta" type product that could be canned. Sorry, I didn't keep the recipe, but maybe someone else did.
