Baking Times

greenspun.com : LUSENET : Bread.com FAQ : One Thread

I have found many recipes for breads to be baked in a 9X5 inch loaf pan. How do I adjust the baking time if I want to make smaller loaves?

Answers

Two ways to do this.

1 Trial and error

2 Determine cubic volume of the 9 x 5 pan by multiplying L X W X H, then calculate the volume of the desired pan. Divide desired pan volume by original 9 x 5 pan volume. This will give you a percentage factor. Use this factor to adjust the weight of the bread, and the approximate bake time.
