looking for potato bread recipes

We've been looking for a really good wholesome potato bread recipe that does not require instant potatoes, or a bread machine. The simpler the recipe the better.

How about potatoe rolls? 1 cup leftover mashed potatoes, 7 cups all purpose flour, 3/4 cup shortening, 1/2 cup sugar, 1/2 tsp salt, 2 well beaten eggs, 1 cup scalded milk, 1 yeast cake Mix potatoes, 1 cup flour, shortening, sugar, salt. Add eggs and milk, cooled to lukewarm. Dissolve yeast in 1/2 cup lukewarm water and add to first mixture. Cover and set to rise in a warm place 2 hours. Add 6 cups flour. Knead until smooth and elastic to touch. Cover and set in warm place to rise again for 1 1/2 hours. Knead. Roll out 1/4 inch thick. Cut with buscuit cutter. Fold like Parker House Rolls. Lay, with space between, on greased baking sheet. Set in warm place to rise 1 1/2 hours. Bake at 350 degrees for 20 minutes. Call me when they are ready.

Sarah's Potato Bread

1 med potato, pared, cubed, and boiled (8oz.) 2 1/2 cups boiling water from potato 1 pkg. rappid-rise yeat 1 tablespoon salt 3 tablespoons sugar 3 tablespoons shortening 5 to 7 cups flour 1/4 teaspoon ginger (ginger helps activate the yeast) Mash the potato and add the potato water, salt, sugar, shortening and ginger.

In a medium sized bowl mix 5 cups flour and yeast, add luke warm liquid mixture and work into flour. Kneed batter into remaining 2 cups of flour.

Let rest in a warm place for 30 minutes. Work down and form into bunns or loaves. Place into pans and let rise until doubled in size.

Bake at 375 degrees for 35 minutes. Remove from pans and brush oil or shortening over entire surface of loaves.

Sherri, Look on your packet of yeast and it should tell you the conversions. Most are 1 pkt = 1 cake.

I remember my mom used to buy yeast cakes and flush them down the toilet to help the septic system. As a kid I thought it was very strange that they sold those "septic cakes" in the grocery store right next to the eggs and milk. :-)

Yummm!! I'm printing these off to try. One thing I miss from Dayton, Ohio, is the potato rolls I used to get at Woody's grocery. I could sit down and eat about 10 at one sitting! Been looking for years for a potato roll recipe, thanks for posting!
