looking for old bisquick recipe

greenspun.com : LUSENET : Countryside : One Thread

Years ago I used to make a recipe off the Bisquick box that my family really ejoyed. Don't know why I quit making it and now that I'd like to make it again it's off the box ! I believe it was called "Impossible Vegetable Pie". It contained no meat, and as I remember it called for brocoli, cheese, eggs and of course Bisquick. You made up a thick batter and then baked it in the oven. I would love it if someone still has the recipe and wouldn't mind posting it. Thanks!!

The recipe I am giving comes off of a "Bisquick Reduced Fat" box.

Impossible Chicken 'N Broccoli Pie Prep time: 18 min. Bake time 39 min.

1 pkg (10 oz) frozen chopped broccoli thawed and drained 1 1/2 cups shredded fat-free Cheddar cheese 1 cup cut-up cooked chicken 1/3 cup chopped onion 1/2 cup Bisquick Reduced Fat baking mix 1 cup skim milk 2 eggs 1/2 tsp salt 1/4 tsp pepper

Heat oven to 400 degrees F. Grease 9" pie plate. Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate.

Stir baking mix, milk, eggs, salt and pepper with fork until blended. Pour into pie plate.

Bake 32 to 37 min or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 or 2 min longer or until cheese is melted. 6 servings.

For Impossible Vegetable Pie: Omit chicken; add 1/3 cup chopped green bell pepper.

High Altitude: Heat oven to 425 degrees F. Bake 33 to 38 min.
