Dandelion Flower Muffins(Baking-Cooking_

We had these last night. They're interesting, very little flavor, but the texture is great. Next time I'm going to add vanilla and blueberries. Gary really liked them.

DANDELION FLOWER MUFFINS...2c unbleached flour...2t. baking powder...1/2c. dandelion petals...1/4c. veggie oil...4T. honey...1 egg, beaten...1 1/2c. milk.

Combine all dry ingredients. In a separate bowl, mix together the liquid add to the dry and sitr just to moisten. The batter should be lumpy. Spoon into an oiled 12-cup muffin tin and bake in a preheated oven 400* for 20-25 min.

Sounds really interesting Cindy. Too bad I don't have any dandelions. I think they all gave up after several years of drought.
