I have a recipe that is always a hit, for church functions or home, freezes well. cuernavaca casserole 1 cup cornmeal, 1 1/2teas. salt, 1/2 teas.bakeing powder, 2 eggs beaten, 1 cup of milk, 2 drops of hot pepper sauce, 1/4 cup veg. oil,2 cups cooked rice, 2 cups shredded cheddar cheese, 1 can 8 3/4 ounces, creamed corn,1/2 cup chopped onion. 2 tbs chopped chilies.

In a small bowl, mix cornmeal salt and soda, In large bowl combine remaining ingredients, blend in cornmeal mixture. pour into 12in +7 1/2 + 2in, greased bakeing dish. bake at 350 for 35 or 40 min.Yield 12 servings,

Trust me there won"t be any left,and if there is freeze it, also lets get ethnic recipes started from all the states,your best of course, Irene
