When are onion seeds ready to be harvested (Gardening (general))

I still have onions from last season in our garden that have survived winter and are going to seed and would like to try planting bunches of thes this fall. My question is : The seed blooms are now white with green stalks kind of resembling a dandelion puff. Should I harvest these now and dry the heads or leave them longer on the stalks? I have some where I have pulled an onion to use the bulb and discarded the hard stalk while saving the seed head already.

wait till they start to dry on the stalk,, then bend them over into a paper bag,, cut the stalk,, let them completly dry in the bag. crumble them up,, in the bag. The seeds are very small , black. When I get some like that,, I usually just plant with the chaff and all.
