Combatting red sorrel in pasture

I have a pretty nasty infestation of it in a 20 acre pasture. Perhaps 30% of the land is covered in red sorrel.

I don't want to use herbicides (I want to be organic) and I don't want to plow (I want to be no-till).

There currently isn't any irrigation to this land.

My reading says that red sorrel grows in soil with low fertility. I wonder what would happen if I planted annual alfalfa there. Maybe the alfalfa would overwhelm and outcompete the red sorrel.

Has anyone beat red sorrel without herbicides or tilling?

Does anyone have any ideas on what I might try?

Eat it - it is very good (lemony flavored) and you might even be able to sell large amounts to a high-end farmer's market person with a gormet salad stall.
