Okay folks, since Debra's getting hitched next month, how about we throw her a wedding shower via the forum? I'm thinking maybe a recipe shower; if we send 'em in, she can print 'em out for a "Forum Friends Cookbook". What'cha all think? Make sure you put your name in the recipe title!!

Polly's Broccoli Salad

3 heads of Broccoli

8 oz shredded cheddar cheese

5 med. green onions, diced (tops, too)

6 slices of bacon, fried crisp and crumbled

2 cups mayonaise

1 cup sugar

1/2 cup wine vinegar, red or mild flavored

In large bowl, coarsely chop broccoli; add cheese, diced onions and crumbled bacon. With wire whip; mix mayo, sugar and vinegar. Pour dressing over broccoli mix; stir. Let stand for at least one hour before serving; stir before serving. Keep refridgerated.

I like this because it is versatile. You can use cauliflower for part of the broccoli, add other veggies such as snow peas and chopped carrots, use up ends of different cheese, use jarred bacon bits or substitute red onions for the green ones. Enjoy!!

Polly, you are so sweet! What a good idea.

debra, here's one from my native side (with modification) and since the elderflowers are flowering right now,it came to mind. This goes way back in my family.Apple and corn fritters can be made with same batter.

Sharon's Greatgramma's Elderflower Fritters

1 c. sifted flour

1 1/2 tsp. baking powder

2 TBS. sugar

1 1/4 tsp salt

I TBS. veg shortening

1 egg.beaten

1/3 c. milk

Abt 2 cups elderflowers, stripped off stems(let them sit a while so bugs can run away! They always have some bugs. Learn to just consider them protein :oD)

Sift flour, baking powder, salt and sugar; cut in shortening.Combine egg and milk and add. Then add elderflowers

Drop by tspful into deep hot fat (375o) and fry abt 2 min on each side or til done. Drain on paper towel.

Serve preferably with homemade wild strawberry jam.Or any other.

Here's another old recipe from my family cookbook. This is half way btwn biscuit and pound cake.

Sharon's Gramma's 1 2 3 4 Strawberry Shortcake

1 c. milk

2 c. sugar

3 c. flour

4 TBS butter

1 tsp. baking powder

2 tsp. vanilla

3 eggs

Throw ingredients together and stir up.Bake at 350 for 40-45 min til knife comes clean.

Pile on strawberries, and drown in milk if you like it.

What do you want from Nick? His No roll punkin pie or his Texas Brownies?

Yes, these are mostly desserts.I put together a family favorites cookbook when my niece got married. 3/4's of the cookbook was desserts, only bc I added some meat & veggie dishes out of my recipes.Otherwise it would have been 99% desserts. You might say my family has a sweet tooth.

I won first place in a (small) salsa contest with this. First friend I told about my win was very skeptical - "YOU were dancing in a SALSA competition???" I found her tone insulting & decided not to correct her. Anyway, here it is:

Sam's Award Winning Pico de Gallo

2 medium red ripe tomatoes 1 jalapeno or similar pepper 1 medium onion 1 large clove garlic

Remove most of the seeds & excess juice from the tomatoes. Chop everything kind of fine. Then add a little of these to taste:

salt black pepper chopped coriander lime juice

This will keep in the refrigerator a few days. I find it a welcome change from cooked salsas in summer.
