canning tomatoes (can I add hot peppers?)

greenspun.com : LUSENET : Countryside : One Thread

Can you tell me if it's possible to put hot peppers in tomatoes when you can them? If so, are they supposed to be pressure processed or can you still do the water bath? Any help here will be greatly appreciated. Dot

Response to canning tomatoes

Dot, I've always just done them in a water bath. Checked just to be sure and this is also what the Ball book and Stocking Up recommend as well.

I always add a pepper to my canned diced tomatoes and juice.

Dot, hot peppers add a whole new dimension to canned tom's and you'll want to label the jars accordingly. Personally, I blanch and skin the peppers and tom's then waterbath.

I just canned tomato sauce today. I didn't add any hot peppers this time but have previously (my husband said it was to hot last year). I actually pressure canned them this year at 5 pounds pressure for 10 minutes. But I have also water bathed.
