need recipe for Zuchinni pancakes

Help The zuchinni are at it again, the chickens flat out will not eat another one and I need a recipe for zuchinni pancakes because I remember them as being really good when my mom made them.

Any help gladly accepted!

Ann. I use zuccini for lasagne noodles in my favorite lasagne recipe. slice the zuccini real thin either in circle slices of long ways my family likes it best sliced long ways as it looks more like lasagne noodles. I use a slicer to do this watch out for you're knuckles though. Don't peel the zuccini. You might need to bake you're recipe a little longer at a lower temp. because the zuccini adds moisture to the recipe. Tastes great we call zucinni Manna this time of year. We also like it sauteed with onions in soysauce. french fried after dipping in a batter. zuccini bread baked and then frozen for Christmas gifts later. raw, use instead of cucumbers for pickles sweet or dill use just like cukes. That's all I can think of right now. Enjoy they'll soon be gone. Linda at peacefulvalley

I make zuchinni pancakes the same way I make potato pancakes - grate the zuchinni, drain out the liquid, add an egg or two, grated onion (I like lots), and flour to make it hold together. You can leave the liquid in, but you just have to add tons more flour. Unfortunately, you have to fry them in a bit of oil, but boy - are they good!

Speaking of Zuchhinni bread my son puts 1/4 cup of cocoa in for chocolate, and a tbls of cinnamon. Pumpkin pie spice and imatation rum is also good. Yummy!

Ha! Know what you mean--keep pushing apple/pear peelings on my chickens and they are about ready to revolt!!!

Wow--I wish I'd thought ofzucchini pancakes when ours were in!!!

But why try to do it all now? I grated squash and zucchini and froze it for later. Did you see my zucchini Pinapple jam post earlier?

This is a great way for using up all that extra zucchini's!

Zucchini Cutlets

1/2 c. grated carrot 1/2 c. chopped onion 1/4 c. each chopped red & green peppers 2 c. of cracker or bread crumbs 1/4 c. flour 1 tsp. baking powder salt & pepper to taste Mix above ingredients together then mix in 3 c. grated zucchini & 2 large eggs. Shape into patties. Cook in oiled skillet till brown on both sides. Serve hot. I make these in large batches & freeze them.

Have used up some zucchini in zucchini pie, tastes just like apple pie. 3 c. zucchini (cut up and no seeds) 3 Tbsp. lemon juice 1 c. sugar 3 bsp. flour 1 tsp. cinnamon Sprinkle lemon juice over the zucchini. Sift surar, flour and cinnamon and mix with zucchini. Put in a 9 inch pie crust and dot with butter. Put on a top crust and bake in 350 degree oven for 45-55 minutes.
