Need a good tomato sauce recipe

The tomato fairy visited my garden while I was out of town! I guess I'd better do something with all of them. I think that someone here mentioned making tomato sauce in the crock pot, how do you do it? If I throw in onions, green peppers, and mushrooms to make a spaghetti sauce can I still waterbath can it or should I pressure can it instead?

Sherri, I would put it in pints and process it in your new little pressure canner. Safer, faster and easier. I think the little book gives you times for different stuff......chose the time that is the longest.

I cook my tomatoes whole until they have cooked down quite a bit and then put them through the food mill. At that point I put them into the crock pot with my other stuff and cook it until it looks the consistancy I want it. Usually takes about 24 hours in my big crock pot.

Sherri,....can't wait to glean from you herb course!!!!Here is my " lazy womans guide to the tomato and zucchinini glut recipe"I chop tomatoes,zuchini,peppers.celery,onions and whatever else is kickin around into big honkin' chunks.I mean the size of half an egg.,throw in fresh basil,garlic and oregano,simmer til I have time to put it in jars,pressure can it till the book says to.I sit a kid in front of it with a good book and a timer.We eat alot of chili,so this is like instant fixins for chili,just add the hot stuff.When I need spaghetti sauce I zap the quart in a blender and voila smooth and spicy!!! I remove only the pepper seeds ,I leave the skins on everything, as long as I know they are'nt sprayed.WE did 6 bushels this way and it last me about 18 months....Happy canning!!!

Teri, that sounds yummy. I think I will give it a try, although whispering...I don't have any zuchini I knew I would be overwhelmed if I planted some, so I didn't plant any. Now don't all of you start mailing it to me! hehehehe

I took a really good class on herbs for women, I'll post some of my notes. I won't be home tonight and Thursday night I have to go to a Pampered Chef party (groan), so I'll try to do it tomorrow or Friday.

Looks like we've done a major thread drift here! :) The seeds are in the center "pincushion" part of the flower. Once the petals die and the center part dries you can just clip them off and throw them in a paper bag and shake, the seeds will fall out. I'll email you directly with my address. Do you want any herb seeds in exchange?
