dumb apple pie question

ok, I know this is a dumb question, but I know most of you can probably help me out. When is the best time to eat an apple pie- straight from the oven, or is it better to let it sit a day or 2 or 3? My yuppie boyfriend wants an apple pie, which I have promised to make, but I want to surprise him next week when I visit him in Dallas. I'll arrive at his house 2 days before he gets home from Canada, so, my dilemma is when should I bake it? Here at home, and carry it with me, at which point it will be 3 days old when we eat it? Or, should I wait and bake it at his house the day before he gets home? I can't do it the day he gets home and still surprise him. I don't eat apple pie and the only pies I really ever bake are pecan which I like to serve the day after baking for best flavor.

I'd wait until you get there to make it. If you make it too far ahead, your crust will probably get soggy.

Straight from the oven is not good because you have to wait at least 1 hr for it to cool somewhat or it will be too runny when you cut it. So 1 hr wait and then serve with a scoop of vanilla ice cream on top.

With the heat and humidity in Dallas, I would bake it the day before. If you bake it 2 or 3 days ahead then it takes him 2 or 3 days to eat it, It could get a little nasty after 6 days.

I would say bake it the day before he gets home at his house. Then on the day he arrives serve it to him hot from the microwave and serve it with a great big scoop of vanilla icecream. "DELICIOUS" Let me know what day and where he lives and I will join him!

Sold, I'll bake it the day before. Thanks for all your advice. Tom, you were right- I just made a test pie, cut it too soon, and it is runny. Still pretty tasty though :)

Girl make it and freeze it! then bring it out at the appropriate time and bake!
