Green Relish

I remember a time when you could buy a hotdog, and it would come with the most delicious bright green relish on it. I've tried recipes of my own in the hopes of duplicating the taste of this relish, but with no success. I was wondering if anyone out there had a recipe for this particular relish of "long ago".

I have a recipe for a relish called Million Dollar Relish. Its not exactly bright green though. 10 cukes, seeded but not peeled 2 red peppers 3 green peppers 2 lbs onions chop all ingredients in the food processor. Let stand overnight with 1/2 cup salt and 8 cups hot water. Drain well in the morning. mix 1 tbsp turmeric, 1 tsp celery seed, 2 tbsp mustard seed, 6 cups sugar, and 3/4 quart vinegar. Bring to boiling point and add chopped veg mixture. Make a paste of corn starch and vinegar and add it to the pot. Simmer low for a couple of hours. Bottle appropriately.

If you look at the ingredients on relish in the store, you will see that most of them add food coloring to give that neon green color.

This is the recipe I use for Sweet Pickle Relish. The finished product is dark green. It's tasty too. 4 cups chopped cucumbers 2 cups chopped onions 1 green pepper, chopped 1 red pepper, chopped 1/4 cup pickling salt 3 1/2 cups sugar 2 cups cider vinegar 1 tbls celery seeds 1 tbls mustard seeds Combine cucs, onions, and peppers in a large bowl. Sprinkle with salt and cover with cold water. Let stand 2 hours. Drain thoroughly. Press out excess liquid. Combine sugar, vinegar and spices. Heat to boiling. Add vegetables. Simmer for 10 minutes. Pack in hot jars. Seal. Process in boiling water bath for 10 minutes. Yield about 4 pints The smaller the cucumbers, the darker the relish. (more skin and less white flesh)
