DOES ANYONE HAVE THE RECIPE FOR QUAKER CORN BREAD? It was on the back of the box, but the product is not sold here and I don't like the way the corn bread is turning out here.

1 Cup Yellow Corn Meal 1 Cup all-purpose flour 1/4 Cup sugar if desired 4 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 1 egg 1/4 cup vegetable shortning Combine corn meal, flour, sugar,baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, about 1 minute. Bake in greased 8 inch square baking pan in preheated hot oven (425 F.) 20 to 30 minutes. Makes about 9 servings.

I was never very happy with the Quaker recipe. My favorite cornbread recipe, compliments of Farm Journal Cookbook, is a little different. 1 cup flour, 3/4 cup yellow cornmeal, 1/4 cup sugar (or 1/8 if you like less sweet), 1 tsp. baking powder, 1 tsp salt, 1 egg, 2/3 cup milk, 1/3 cup melted butter. Mix 1st 5 in one bowl, last 3 in second bowl, then pour wet over dry & mix just until moistened. Pour into 8x8 greased pan, bake at 425 for about 25 minutes.

Here's my Quaker Corn Bread Recipe it came off the bag about 7 years ago.

1 1/4 cups Flour 3/4 cup cornmeal 1/4 cup sugar (I dont use that much if any) 2tsps baking powder 1/2 tsp salt 1 cup milk 1/4 cup oil 1 egg-beaten

Heat oven to 400F. Combine dry ingredients, stir in milk, oil, and egg. mixing until dry ingredients are moistened. Bake 20 to 25 minutes.
