Any recipe for granola?

greenspun.com : LUSENET : Countryside : One Thread

I have looked in many recipe books and have still not found any recipe's for breakfast granola. I have found granola bars that are quite good, but not all that I am looking for. Please let me know. I am sure I can make it a lot cheaper than I can buy it.

I have a big roasting pan that I fill with oats (sorry I've never measured, just dump it in). Sprinkle the oats with some cinnamon. In a saucepan- about 2 cups honey, 1 cup brown sugar, about 2/3 cups each peanut butter and oil. Heat till the pb is melted, then mix with the oats. If it seems too dry I add more honey. Bake at 350, 10 minutes, stir then another 10 minutes. If you want it crunchier, you can turn the oven off and leave it in a bit longer. This feeds 5 kids, hubby and me breakfast for about a week. It's my adaptation of the granola recipe in the Tightwad Gazette. We add fruit and nuts when we eat it.

Jennifer, Here's my granola recipe that I've been using for over 20 years. I can hardly read the recipe card, it's so stained:

6cups old fashioned uncooked oatmeal, 1/2 c firmly packed brown sugar, 3/4 c wheat germ, 1/2 coconut, 1/3 c sesame seeds, 1 c chopped nuts, 1/2 vegetable oil, 1/3 c honey, 1 1/2 tsp. vanilla.

Toast oats on 2 ungreased cookie sheets in 350 oven for 10 minutes. Combine other dry ingredients in huge bowl, then add the warm oats. Add remaining ingredients and toss to coat well. Divide mixture onto 2 ungreased cookie sheets and bake at 350 for 20-25 minutes, check and stir frequently. Edges will brown easily. Stir until evenly browned. Turn onto cut-open brown paper bag to cool. This will absorb excess oil. Store in tightly covered container in refrigerator. When serving, can add more nuts, raisins, dates, or other fruit. I prefer a mixture of almonds and walnuts. Don't bake the granola with the fruit, it will get hard. Sometimes I don't add wheat germ, I use All-Bran cereal, sometimes I don't use coconut. Change it to suit your family's tastes.

Wonderful. Let's trade. I have a really good granola recipe that I made up and we've used for probably 20 years but I've never had any luck with granola bars. Maybe you'll share granola bar recipes?

Granola: 5 cups oatmeal, 1 cup wheat germ, 1 1/2 cups coconut, 8 oz chopped dates, 1 cup nuts (slivered or sliced almonds, raw peanuts, walnuts or pecans), 1 cup seedless raisins, 1 cup sunflower seeds, 1/2 cup vegetable oil and 1/2 cup honey. Combine everything but the oil and honey in a bowl. Brig oil and honey to a boil. Pour over other ingredients, mixing thoroughly. Bake 325 degrees for 20 or 25 minutes or until just slightly brown. Stir 2 or 3 times as it cools. Store in a tightly covered jar. I often substitute dried pears or apples for one or more of the fruits. Any kind of coconut is good---flaked, shredded, minced, sweetened or unsweetened. The main thing is to keep the proportions approximately the same. I also substitute dark maple syrup for the honey. We love this with milk for breakfast for supper or snacking. Does this help?

Forgot to say that I often add the fruit about halfway through the baking to keep the raisins from getting too dark. Sorry.

Fat Free Granola

4 cups oats (either old fashioned or quick) 1 cup oat bran (or just use five cups oats) 1/2 cup dried milk 1 teaspoon cinnamon

1/2 of a 12 oz. can of concentrated apple juice (don't dilute) 1/3 cup honey 3/4 cup brown sugar

Melt the apple juice, honey and brown sugar together in a saucepan and then pour over the dry ingredients (baking or roasting pan will do). Stir it all together and bake at 350 degrees for about half an hour stirring every ten minutes. Keeps well and my husband says it is the best breakfast cereal he's ever had.

Forgot to say add about a cup of raisins or whatever you want to add after the granola is cool.

These all sound so good I'd like to try some. Can you tell me how long they'll keep and must they be refrigerated? Thanks in advance.
