Hi Pastor:

I'm no expert having only had one experience with this. We had a two year old Ram that we butchered a few years ago. Thought the meat would only do for dog food. The butcher told me that if you butcher during the "off" season when they are not breeding and if they are not around the ewes for awhile the meat will taste fine. We tried it and I would say that the resulting meat was very acceptable. We have especially appreciated the beautiful sheepskin rug which we have by the fire to remember him by. Good luck!
