Supper-Thursday Evening

greenspun.com : LUSENET : Country Families : One Thread

Hi Everyone, thought I would post this early as I will be on the run this evening. Tonight we are having: Baked boneless-skinless chicken breast, with a honey/mustard dipping sauce, corn-bread, sweet potaotes, and a big fruit salad. Drink will be choice of water or milk.

Here is the run-down: 1 pound of chicken breast on sale $1.88 a pound, corn bread is home made with corn meal and wheat flour, real butter to go with it, sweet potatoes are home-grown, no added sugar, I cook them in orange juice and sprinkle with cinnamon, fruit salad was made with watermelon, cut up oranges, grapes, and frozen raspberries, we picked and froze this summer (no sugar added). I don't know for sure the cost breakdown: fruit was probably about $1.50 (just little odds and ends) corn-bread is about $.25 for the pan, potatoes were home grown, and Only about 1 cup of OJ for them (10 cents). That's it for here tonight, no dessert, we usually just have it once during the week and once on the weekends.

We still have a lot of watermelon left, it was a really big one, so I'm sure we will be eating it for a few more days!!!

Easy dinner tonight. Have some chicken drumsticks to throw in the crockpot, add some BBQ sauce and the kids are quite happy! Also will make some mashed potatoes, have some potatoes that are getting a bit soft and need used now. Some vegies in the refrig are needing cleaned up. Hubby is out of town this week, so kids and I have been using up various things that maybe don't make a full meal but are easy enough to cook several and let the kids pick what they want! 20 year old son wants to make an apple pie for dinner and I'll let him!! He cooks quite well. (Will have to save a slice for Dad) Denise

Melissa! In regards to those judgmental emails you are enjoying [?] and what you feed your family-----. For supper tonight at the old Illinois hilllbilly's house-just whatever I can find in a can that's available, somewhat nourising and edible. Calvin grub is NOT excluded!

I know this should've been on the other thead but I'm and ornery old hick---so----cook what ya'll want and we'll keep readin this forum. You are doin a fine job and its' a dandy. Now, if old Calvin is outside I'm fix'n to find some stuff for supper. old hoot. Matt.24;44

Dinner tonight is meatloaf, mashed potatoes, corn and veggie sticks. Dessert is choco chip or oatmeal cookies. FIL and BIL are here to help work on fences so I needed something pretty substantial. A friend of ours is the Armour meat rep to Wal-Mart and he gave me four pork tenderloins, Peppercorn seasoned, for dinner tomorrow night when I will have @17 people here. They are wonderful and I can't wait to get to eat them. Sorry to get ahead a day!!

Tonight we had "Senate Bean Soup" or, plain old white navy beans cooked with some pork bones saved from a pork roast, with carrots and potatos-this time of year I can buy potato"culls" these are perfectly good potatoes that dont go to market because they are too knobby or have a blemish 50lp for $10. I grow my own onions and I have a "celery houseplant" much thanks to Ken on CS forum. Anyway, I made cornmeal muffins to go with the soup-fed three adults, two kids for less than $2.00 with plenty of leftovers-this was pretty thik soup, will probably thin it out and serve with grilled cheese for weekend meal. we still have halloween candy for dessert.

Kind of disappointed "we" decided against the chocolate cake;) The chicken breasts sound good to me--planning to bake up some today. I buy the quick frozen ones, also when they are on sale. Mine like them baked with soy sauce. Probably have mac and cheese beside them for lunch and potatoes for supper. Garden is still giving us brocolli, and there's always the frozen zuccini cake;) Maybe some apple slices. Milk is almost always to drink.
