Lemonade Pie

It takes four basic ingredients. 1 can eagle brand milk 1 tub cool whip 1 small can frozen lemonade 1 graham cracker pie crust

thaw out lemonade and cool whip( I have found cool whip is usually frozen when I buy it.) mix with eagle brand milk pour into pie crust and let chill for a couple of hours. Very easy, very tasty. If anyone else would like to share dessert recipes I can always use 'em

This is definitely a special occasion cake....little more trouble than average and lots of ingredients. But, if you want to make something really, really delicious...this is the one. A co-worker made it and brought it to work when I worked at Fieldcrest. Yum!

BLUE RIBBON CARROT CAKE 2 cups plain flour 2 teaspoons soda 1/2 teaspoon salt 2 teaspoons ground cinnamon 3 eggs (well beaten) 3/4 cup vegetable oil 3/4 cup buttermilk 2 cups sugar 2 teaspoons vanilla 2 cups grated carrot 1 (8 oz) crushed pineapple (drained) 1 (3-1/2 oz) can flaked coconut 1 cup chopped walnuts

Combine flour, soda, salt, cinnamon; set aside. Combine eggs, oil, buttermilk, sugar and vanilla; beat until smooth. Stir in flour, pineapple, carrots, coconut, and walnuts. Bake in (2) 9 inch cake pans at 350 degrees for 35-40 minutes. Immediately spread buttermilk glaze. Cool in pans 15 minutes. Remove and let cool completely-ice with cream chees orange icing.

BUTTERMILK GLAZE 1 cup sugar 1/2 teaspoon soda 1/2 cup buttermilk 1 Tablespoon light corn syrup 1/2 cup butter 1 teaspoon vanilla

Combine sugar, soda, buttermilk, butter, corn syrup in large pot. Bring to boil; cook 4 minutes, stirring often. Remove from heat and stir in vanilla.

ORANGE CREAM CHEESE ICING

1/2 cup butter (soft) 8 oz cream cheese (soft) 1 teaspoon vanilla 2 cups sifted powdered sugar 1 teaspoon grated orange rind 1 teaspoon orange juice

Combine butter and cream cheese; add rest of ingredients and beat until smooth.

I love citrus based desserts, I am thinking that you could even substitute frozen orange juice or frozen limeade for a little different taste.
