sun choke or jerusalem artichoke recipes

Okay I have to get out in the garden and dig my sun chokes today. We are going to try to store some in the root cellar and some will stay in the ground. Last year we had ice over the ground for a long time and I want to make sure we can get to at least some of them.

What do I do with these things???? We have only ever boiled them up like potatoes or put them in a stir fry (which I didn't really like). Do you guys have any good recipes???

Kim, I am having trouble identifying these things, are they about 8 foot tall, or taller sometimes, and have smallish (2 or 3 inches) yellow "sunflower shape" flowers in late summer and fall? At first hard frost they die all the way back to the ground?

We have these growing all over down in the woods, especially in the damp flood plain area around the creeks. Literally tons of them!!!

I knew too they where edible, if they are "chokes", but don't have any clue on how to fix 'em either!!!
