Beef Jerky

Does anybody have a recipe for jerky using chili peppers & liquid smoke? What is the best kind of beef to use? Lastly, what is the best way to store it after it is prepared? Thanks

Dave , I use any kind of roast as long as there isnt to much fat. I have the butcher slice it thin .I season to taste .I also use soy sauce.

Rump roast. I haven't made jerky for awhile. I used liquid smoke garlic powder, tabasco sauce, soy sauce, a tablespoon or two of water, I think-maybe that's bbq sauce. I'll try to remmeber more, it was definitely good. My brother gave me the original recipe and I added to it.

Ask butcher to cut the roast for making jerky. Also, worcestershire sauce, salt, 2 or 3t of salt. You gotta have lots-best to check another recipe for salt amount, experiment and see what tastes good to you. Marinate well before drying, at least a couple of hours.

This is the recipe I use for deer jerky. It is pretty spicy and has a lot of flavor. I never have enough left to worry about storing it! But it says to store loosley coverd in the refrigerator. I se any cut of meat and don't notice much difference in the quality of the jerky. when I make a batch of this we eat it until it feels like our teeth will fall out!!

2 1/4 cups soy sauce

1 1/2 cups Worchestershire sauce

3 tsp garlic powder

3 TBS allspice

3 TBSP coarse ground pepper

6 TBS onion flakes

2 tsp liquid smoke-recipe originally called for this but I don't use

cut meat into strips about 1/2 to 1 inch size. Marinate in

refrigerator for 3 days in a sealed bowl, shaking every once in a

while. On the 3rd day, drain, and dry in an oven, or we do ours on

top of our woodburner, over very low heat. You could add the

peppers to the marinade. I sprinkle more pepper on mine right

before I cook it.
